🥗 Roasted Brussels Sprouts with Cranberries & Pecans

A lighter, flavorful side dish that brings festive color and crunch to your Thanksgiving table!

Ingredients:

  • 1½ lbs Brussels sprouts, trimmed and halved

  • 2 tbsp olive oil

  • ¼ tsp salt

  • ¼ tsp black pepper

  • ½ cup dried cranberries (no sugar added if possible)

  • ⅓ cup chopped pecans (toasted if desired)

  • 1 tbsp balsamic glaze or balsamic vinegar

  • Optional: sprinkle of feta or goat cheese for a creamy finish

Instructions:

  1. Preheat oven to 400°F.

  2. Toss Brussels sprouts with olive oil, salt, and pepper. Spread evenly on a baking sheet.

  3. Roast for 20–25 minutes, stirring halfway through, until golden and crisp on the edges.

  4. Remove from oven and toss with cranberries, pecans, and balsamic glaze.

  5. Add cheese if desired and serve warm.
