Roasted Sweet Potato & Carrot Medley
Servings: 4–6 | Prep: 10 min | Cook: 30 min
Ingredients:

2 large sweet potatoes, peeled and cubed

4 carrots, peeled and sliced

1 tbsp olive oil

1 tsp cinnamon
-
1/4 tsp nutmeg

Salt & pepper to taste

Optional: 2 tbsp chopped walnuts or pecans
Instructions:

Preheat oven to 400°F (200°C).

Toss sweet potatoes and carrots with olive oil, cinnamon, nutmeg, salt, and pepper.

Spread on a baking sheet and roast 25–30 min, tossing halfway through.

Sprinkle nuts on top for added crunch.

Serve warm — naturally sweet, nutrient-rich, and colorful!
