Roasted Sweet Potato & Carrot Medley

Servings: 4–6 | Prep: 10 min | Cook: 30 min

Ingredients:

  • 2 large sweet potatoes, peeled and cubed

  • 4 carrots, peeled and sliced

  • 1 tbsp olive oil

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • Salt & pepper to taste

  • Optional: 2 tbsp chopped walnuts or pecans

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Toss sweet potatoes and carrots with olive oil, cinnamon, nutmeg, salt, and pepper.

  3. Spread on a baking sheet and roast 25–30 min, tossing halfway through.

  4. Sprinkle nuts on top for added crunch.

  5. Serve warm — naturally sweet, nutrient-rich, and colorful!
